Proof Bakery Bacon Cheddar Corn Scone

For the second straight week, it was pork-related pastry that made the biggest impression. Na Young Ma and her team of bakers consistently fill Proof Bakery’s displays cases and countertops with minimalist cakes, cookies, croissants and scones. They bake scones like currant and chocolate cherry rosemary, but it was a recent version that was been most inspiring. Their scone ($3) with crispy, smoky bacon tiles, sweet corn and sharp Hook’s aged white cheddar had a savory hint and was a good departure from the typical dry triangles that would be better off as doorstops at plenty of other bakeries or coffeehouses. My only concern is that this version won’t stick. Proof refreshes their cases beyond-seasonally, and with corn on the way out soon enough, the bacon-y pastry could easily be shown the door until 2012.
