Proof Bakery Bacon Cheddar Corn Scone

Scone Los Angeles

Savory pastries are fascinating to me. Proof's. bacon cheddar corn scone is particularly intriguing.

For the second straight week, a pork-related pastry made the biggest impression. Na Young Ma and her baking team consistently fill Proof Bakery display cases and countertops with minimalist cakes, cookies, croissants and scones. They bake scones like currant and chocolate cherry rosemary, but a recent version was most inspiring. Their scone ($3) with crispy, smoky bacon tiles, sweet corn and sharp Hook’s aged white cheddar had a savory hint. This was a good departure from the typical dry triangles that would be better off as doorstops at other bakeries or coffeehouses. My only concern is that this version won’t stick. Proof refreshes their cases beyond-seasonally. With corn on the way out soon enough, the bacon-y pastry could easily be shown the door until 2012.

Dose of Vitamin P spotlights my favorite pork dish from the previous week.
