On my honeymoon to Spain, world famous San Sebastian cheesecake destination La Viña was closed for fall break. My wife and I ate very well on this trip, so don’t shed any tears. We quickly recovered from this dessert disappointment. Little did I suspect that Basque cheesecake, this fluffy, toasty, crust-free variety, would soon be readily available back home. Basque cheesecake is now one of the most popular Los Angeles cheesecake styles, rocketing past sturdy New York inspired slabs and every other style imaginable in popularity. I often partake in Basque cheesecake, but not exclusively.
Los Angeles is susceptible to trends, like anywhere else, but we’re also defined by innovation. This creative ethos extends to cheesecake, which can get pretty wild in the right kitchens. Yangban’s whipped cheesecake with butter coconut crust is certainly unique. So was Bar Chelou’s brûléed cheesecake with toffee date cake and spiced coffee crème Anglaise before this dessert left the menu.
