The Buddhist monks who first started harvesting and preparing matcha after bringing the Chinese green tea back to Japan would no doubt find current matcha offerings mystifying. Even a basic matcha latte would now blow minds. Traditional matcha ceremonies involve nuance, down to the bamboo whisking technique, water temperature and steeping time. To even produce ceremonial-grade matcha requires profound attention to detail, from harvesting choice shade-grown tea to steaming the tea to suspend oxidation, to drying and grinding trimmed leaves with a stone mill.
Big respect to people who can grow, source, and serve matcha as the centuries old rituals prescribe. I enjoy matcha ceremonies to experience the tea’s truest expression. At the same time, L.A. has never been beholden to tradition. As a result, many of my favorite Los Angeles matcha drinks get pretty creative, with fruit, tonic, cream, and even horchata.

Love Matcha! I’m much of a tea drinker than coffee. I’d like to see more shops take teas in different directions.
Damo and Stagger cafes in K-Town also make good Matcha drinks.
