Dino Balocchi clearly has a sense of humor. The Littlefork lead bartender, previously with Longman & Eagle in Chicago, tips his facetious cap to a frigid central Canadian province with a cocktail called Saskatchewan Summer ($12). He crafts the aromatic drink (pictured at center) with rye, cardamom, honey, medicinal Fernet, and Forbidden Bitters (originally but no longer made with tonka beans by Miracle Mile Bitters founder Louis Anderman) and serves it on the rock. Balocchi forms cumulative bite while maintaining balance and creating an enticing raspberry hue. An orange peel cap completes the spirited picture.
