“Years ago, Break of Dawn chef-owner Dee Nguyen posted on Facebook: “Our ultimate dying meal if we have to pick one: chicken and rice.” That post stuck with me. I’m not ready for the great beyond, but on good days, when the combo really hits, chicken and rice can be bliss. As I’ve learned with Los Angeles chicken dishes worth seeking, the key protein doesn’t need much help. However, I can appreciate accompaniments like rice infused with spices, fried garlic, or better yet, chicken or duck fat.
