The Hart + The Hunter is one of L.A.’s newest restaurants to capture my attention. Since the Cali-Southern spot resides in a hotel (West Hollywood’s Palihotel, to be specific), talented chef-owners Brian Dunsmoor + Kris Tominaga have served three meals daily from their fall 2011 jump. On January 20, the duo added brunch, drawing on existing menus for a few dishes and charting new (Southern) ground with plates like praline pancakes and my personal favorite, Maple Glazed Pork Chop ($18). The juicy, slim-cut chops sported winning sears and graced slightly sharp cheddar grits and supple greens and arrived in a silky blanket of silky red eye gravy. The gravy, crafted with coffee and pork drippings, came studded with bacon. Bonus! Since red eye gravy is biscuit friendly in the South, I carved a square of pork chop and added it to one of the Hart + The Hunter’s signature biscuits, along with gravy and greens, forming bites that brought me back to my Nashville days.
