Division 3 opened on a low-profile stretch of Division Street in Glassell Park to start 2016. The small restaurant proved to be such a hit that chef Matthew Dickson and business partner Jenna Turner (Habitat Coffee and Chango Coffee) managed to parlay their success into a bigger Hollywood outpost. Their new space just west of the 101 freeway features a larger kitchen and expanded menu, which makes Division 3 version 2.0 an even bigger destination. The Division 3 Hollywood design includes exposed wood rafters and seats at both two-tops and a street-facing counter. Order at the counter from blackboard menus that build on a steady Glassell Park diet of biscuit sandwiches, regular sandwiches, and salads.
Pork Belly Cubano ($10) is my favorite new Division 3 menu item in Hollywood and riffs on an iconic Florida sandwich. A meaty roasted pork belly slab joins ham, molten Jack cheese, mayo, tart pickles, and punchy mustard on a six-inch Brazilian roll. The sturdy play on a French roll is pressed and proves to be a good pairing for the balanced fillings, and the sandwich a tasty twist on a classic Cubano.
