Demitasse Roastery + Kitchen in Hollywood is Bobby Roshan’s most complete vision for Demitasse to date, complete with a Probat coffee roaster, a state of the art La Marzocco Mistral espresso machine, and a beer and wine license. Still, the leading innovation is the full food program from chef Jeff Lustre, who serves breakfast, lunch, and dinner daily.

Lustre is a Filipino-American who most recently worked at Alimento. On his menu at Demitasse, you’ll find flashes of creativity mixed with heritage and comfort. Depending on the meal, it’s really just incumbent upon the diner to decide how adventurous to get.

For my first Demitasse experience, I definitely went way bigger than I typically do for breakfast. Their Breakfast Sandwich ($10) features a rich fried duck egg with vivid orange yolk and crispy skirt, a thick slab of Fra’ Mani mortadella that’s crisped on the griddle, and a sturdy toasted pan de sal from United Bread & Pastry in Silver Lake. Each sandwich typically comes with truffle flecked Sottocenere cheese, though I subbed in molten pepper Jack, which may stray from the prescription, but better suits my personal tastes in cheese.
