Shilin Night Market serves a glutinous sausage that's unfamiliar to Western palates, but tastes great and features surprising texture.

Most cities have their unique take on a street dog. Mexico City, and now Los Angeles, has the bacon-wrapped hot dog. Anthony Bourdain has reveled in documenting other interpretations on “No Reservations.” Some of his favorites include the kooky Puka Dog on Oahu, Japadog in Vancouver, and of course the deep-fried rippers of his New Jersey youth. However, the Sticky Rice Rolls Stuffed with Sausage (NT$55 ~ $2) at booth A7 in Taipei’s Shilin Night Market may beat them all.

The two young guys who run the specialized Shilin Night Market booth griddle pork sausages until caramelizing their taut skins. They then slice open a griddled and glutinous sticky rice “bun” and slide in the sausage. Garnishes involve an aggressive combination of spicy chile sauce, sweet chile sauce, crunchy dried radish bits, pickled Chinese cabbage, ginger, and tart gherkin. It was hot to the touch, a blur of spice, fire and pungency. This sausage was tricky to eat on the move, but well worth the pain.
