Tapatía is the name for a woman from Guadalajara, and is now a sandwich shop from chef Angela Barajas and husband Francisco Belmonte in Culver City. The couple also runs three sandwich shops back home in Guadalajara, and shifted their sandwich acumen to L.A.
The tiny strip mall space features a few tables and limited menu. Yes, Tapatia sells tortas ahogadas, Guadalajara’s most famous sandwich, complete with carnitas fried in a cazo, blanketed in spicy chile de arbol salsa. I opted for another GDL specialty, lonche de pierna.
Lonche de Pierna ($6.99) features pork leg marinated in tomato and mild guajillo chile, slow-cooked, and served on a crusty sourdough roll, a subtly tangy approximation of the classic birote. Accompaniments include tomato, shaved red onion and crema of mayonnaise, sour cream, and mustard. Dress with pickled jalapeños or chile de arbol salsa to dial up the heat.

This looks, and sounds, absolutely amazing. We can almost taste those flavors just melting in our mouth. The crispy sourdough is the perfect accompaniment.
