Rebecca Donze, who grew up an hour outside of Bordeaux, opened her creative French cream puffery – Sweet Nuns – on the second floor of a Picfair Village strip mall in 2016. She specializes in snowman-like, custard-filled choux figurines that traditionally go by religieuses, which translates from French as nuns. They make Donze’s hidden bakery worth seeking.
Donze’s roster includes Classics and Seasonal Items that might include vanilla, dark chocolate, matcha, citrus (lemon and yuzu) or banana flambé. I gravitated toward the seasonal Salted Caramel Passion Fruit Sweet Nun ($5). Orbs of firm choux pastry with great give arrived coated with marzipan and filled with salted caramel cream deglazed with passion fruit and cream and accented with orange zest. The cream was great, with a savory tinge and balancing tang. Donze keeps her sweet nuns cooling in the fridge, to preserve the integrity of the pastry and cream. These are clearly cream puffs with plenty of integrity.
