Paso Robles, a destination for wine, food, and Firestone Walker Brewing Co., was sorely missing specialty coffee. That is until Joseph Gerardis, Matt Klomp, and Jeremy Sizemore opened Spearhead Coffee on January 1, 2015. The standout side street cafe and roastery features a stainless steel counter, a forest of exposed filament lightbulbs hanging from the ceiling, and a glass-framed roasting works in back. One aspect that stood out is their selection of signature beverages, none more compelling than Matt’s Aztec Mocha.

Matt’s Aztec Mocha ($4.25), named for Matt Klomp, delivers a double shot of espresso, premium Clover milk, molten dark chocolate, vanilla-infused honey, and a warming spice blend of cayenne, nutmeg, cinnamon and clove. Max, the skilled barista who kept the doors open until just past closing time, elevated the experience with his hospitality and artistry.
