Guan Zhi Lin's "double layer roll sausage" is a Shilin Night Market standout.

Jet lag was sinking in and it was tempting to skip dinner. Well, not really. Especially after my concierge described “fried chicken as big as your face” at Shilin Night Market.

The red line spit me out at Jiantan Station. I passed a blue living wall with pockets of plantlife that shielded the market’s future. It was obvious when we arrived at the existing Shilin Night Market, since a wall of LED images gave way to sidewalk stands. I instantly spotted fried chicken cutlets at a yellow stall. Two girls said, “It’s not even the one that everybody goes to,” adding, “They’re all the same.” One girl pointed me to A7, Guan Zhi Lin Double Layer Roll Sausage (官芝霖大腸包小腸), home to sticky rice rolls stuffed with sausage.

They griddle pork sausages until skins caramelizes. Boothtenders then slice open a glutinous sticky rice “bun” and slide in the sausage, plus a potent combination of sweet and spicy chile sauces, crunchy dried radish bits, pickled Chinese cabbage, ginger and tart gherkin.

Guan Zhi Lin Double Layer Roll Sausage was hot to the touch and tricky to eat on the move, but well worth the pain.
