Cafe Vietnam Truck roams the Valley serving comforting rice bowls and bah mi.

Food trucks are far too often moving targets. I’ve shown up at different locations during appointed times posted on social media, only to get ghosted. Thankfully, Cafe Vietnam Truck has proven to be reliable and serves flavorful food.

Nha Trang native Jen Nguyen and her boyfriend Christian Ev operate the roving orange Cafe Vietnam Truck. The couple serves Vietnamese food made with organic ingredients. I ordered and enjoyed both dishes that Nguyen misses from home: scrambled egg banh mi and a Braised Pork Belly Rice Bowl ($13). The latter featured steamed white rice piled with fork-tender pork belly chunks braised with garlic, shallots, peppercorns, and coconut milk. Each plastic bowl co-stars cilantro, sliced cucumber, julienne pickled carrots, crunchy pickled daikon slices, spicy jalapeƱos, and a soy sauce sprinkling.
