Food trucks are far too often moving targets. I’ve show up at different locations during appointed times posted on social media, only to get ghosted. Thankfully, Cafe Vietnam Truck has proven to be reliable and serves flavorful food.
Nha Trang native Jen Nguyen and her boyfriend Christian Ev operate a roving orange truck that serves Vietnamese food made with organic ingredients. I ordered and enjoyed both dishes that Nguyen misses from home: scrambled egg banh mi and a Braised Pork Belly Rice Bowl ($13). The latter featured steamed white rice piled with pork belly braised with garlic, shallots, peppercorns, and coconut milk until forming fork-tender chunks. Each plastic bowl co-stars cilantro, sliced cucumber, julienne pickled carrots, crunchy pickled daikon slices, spicy jalapeños, and a sprinkling of soy sauce.
Dose of Vitamin P spotlights my favorite pork dish from the previous week.
