Fig Tree Café is a San Diego breakfast institution, and founder Johan Engman’s latest venture, Breakfast Republic, is making even bigger waves. This North Park restaurant debuted in 2015 and is already spawning a Liberty Station spinoff. The space features bookend patios, a mural of chickens fleeing their coop, and a whisk and spatula logo. Some popular menu items include breakfast mac and cheese, cinnamon roll pancakes, and breakfast jambalaya. No matter what you order, any dish benefits from a side of Jurassic pork.

Yes, “The Lost World: Jurassic Park” filmed in San Diego, but it’s not like Breakfast Republic is making Jurassic pork from T-Rex. Instead, Jurassic Pork ($5) consists of thick-cut pork bacon that’s marinated and baked with paprika and brown sugar and served nice and crispy. Yes, they use brown sugar, but somehow this bacon stays on the right side of sweet.
