Sotto serves scintillating porcetto with contrasting textures and accompaniments.

Talk Media Networks, a website from Dean Valentine that’s developing local programming, recently hired me to host and produce a weekly video series titled Pork L.A. This series is a natural progression for me, as it builds on my weekly Dose of Vitamin P, a column that will continue in perpetuity on Food GPS. The plan for Pork L.A. is to feature a different pork practitioner every week, with direction, camera work and editing from Stan Lee, Drink Eat Travel co-founder. Each episode appears on Friday at 2 p.m., the payoff being a new destination and dish.

Pork L.A. Episode #1 featured Sotto chef-owners Steve Samson and Zach Pollack, who prepared their Sunday special, porcetto, a specialty involving rolled, roasted and basted belly, breast and back that comes with green tomato mostarda. If you can’t make it to Sunday supper, their Beverlywood restaurant also features a porcetto sandwich at lunch, on house-baked bread with pickled vegetable giardiniera.
