I frequently reference “Lisa The Vegetarian,” the legendary 1995 Simpsons episode from writer David X. Cohen that depicts Lisa Simpson struggling with a concept her family takes for granted: eating meat. Famous vegetarians Paul and Linda McCartney even appear in Apu’s garden above the Kwik-e-Mart to discuss the matter with her. Earlier in the episode, Lisa reveals that bacon, ham, and pork chops all come from the same animal, to which her father Homer replies, “Yeah, right, Lisa. A wonderful, magical animal.” Of course Homer was right. In many ways, pigs are magical. Pork chops are proof positive, especially the bone-in cuts from properly raised heritage breeds like Berkshire, Duroc and Red Wattle with deeper, more profound flavor and higher fat content.
