“The Last Of Us” Season 1 first aired in 2023 featuring cordyceps-infected zombies marauding against surviving humans in a post-apocolyptic U.S. I wasn’t familiar with the video game source material, but even before the TV show’s release, and without even knowing it, I was already part of the resistance. I regularly ate mushrooms at restaurants, which chefs wisely chopped, sliced, roasted, grilled, sautéed, marinated, braised, and fried. Sometimes, the best defense is aggressive offense. I’m gladly on the front lines in what I learned is an existential battle against fungi. Mushrooms far outnumber us, so I’ll continue to do my part. Black trumpet, chanterelle, cremini, maitake, morel, oyster, porcini, portobello, shiitake and white button mushrooms are all in my crosshairs. Find my favorite Los Angeles mushroom dishes since 2022.
