The owners at King Noodles 68 posted a surprisingly moving quote from Mahatma Gandhi on the bathroom mirror: “Live as if you were to die tomorrow. Love as if you were to live forever.” Based on the Vietnamese comfort food that King Noodles 68 serves in Little Saigon, the owners have clearly taken the words to heart.
I enjoyed all three dishes that I ordered, but was especially impressed with Hủ Tiếu Hoac Mi Kings Noodle ($8). Their signature egg noodle bowl showcases lean thin-sliced pork, sweet shrimp, and tender scored squid. Toppings like scallions, bright green herbs, and cracked black pepper work harmoniously. Still, it’s the flavorful chicken broth that takes this bowl to another level. I’m not sure if the owners truly intended these noodles for kings, but I could see how they’d suit royalty.
