King Noodles 68's signature noodle soup combines ingredients from the land and sea.

In the bathroom at King Noodles 68, the owners posted a surprisingly moving quote from Mahatma Gandhi on the mirror: “Live as if you were to die tomorrow. Love as if you were to live forever.” Based on the Vietnamese comfort food that King Noodles 68 serves in Little Saigon, the owners have clearly taken the words to heart.

I enjoyed all three dishes that I ordered, but was especially impressed with Hủ Tiếu Hoac Mi Kings Noodle ($8). Their signature egg noodle bowl comes topped with lean thin-sliced pork, sweet shrimp, tender scored squid, scallions, bright green herbs, and plenty of cracked black pepper. The toppings work harmoniously, but the flavorful chicken broth takes this bowl to another level. I’m not sure if the owners truly intended these noodles for kings, but I could see how they’d suit royalty.
