2008 Grilled Cheese Invitational champ Eric Greenspan is known to get creative.

The Foundry on Melrose chef-owner Eric Greenspan won the 2008 Grilled Cheese Invitational by combining short rib with Taleggio and apricot caper puree. Now the New Jersey native plans to roll out a fast casual concept: Greenspan’s Grilled Cheese and Egg Creams. Expect eight different grilled cheese sandwiches and five seltzer drinks, including egg creams and lime rickeys. He also plans to offer potato knishes, tots and latkes. He promises a “Coney Island East Coast feel.” Why grilled cheese? Greenspan said, “Winning the Grilled Cheese Invitational and having people coming in and loving the sandwich, it’s taken on a life of its own.” Greenspan doesn’t have an exact location, but plans to start on the Westside, Hollywood and downtown, in that order, “then see if they want one in Missouri.”
