Don’t bother comparing Los Angeles pizza to New York City. It’s a total waste of time. I grew up in New Jersey, so I initially gravitated toward New York City style pizza, since that’s what was readily available. Restaurant competition was pretty fierce, so even neighborhood spots in the Tri-state area were pretty good. Since then, I’ve enjoyed great pizza in cities like Chicago, New Haven, Trenton, San Francisco, Seattle, blah, blah, blah. Good pizza is good pizza, wherever it’s made.

The idea that you need a particular water to make good pizza is ridiculous. If you really want a certain water profile, reformulate it, but a truly dedicated pizzaiolo will find ways to make delicious pizza, even with municipal tap water.

Los Angeles has built a robust pizza community with representative styles ranging from New York to Neapolitan, Detroit, Chicago, Roman, and more.
