The British Empire of course has had a lasting impact on global culture. Not many people outside of the U.K. would celebrate many lingering effects. That said, some popular British food items have proliferated across the more than 50 Commonwealths, meaning you can still find sausage rolls in Canada. The best version I’ve found in my limited search is available at Fol Epi Bakery, a downtown Victoria spinoff from baker Cliff Leir next to sister restaurant Agrius that opened in November, 2015, building on the success of his original Old School bakery across Johnson Street Bridge.

Leir is one of North America’s most talented bakers, harnessing a wood-fired oven in Dockside Green to produce amazing Viennoiserie and bread. His house recipe sausage rolls ($5) tasted old school in the best possible ways, with flaky, buttery pastry swaddling a juicy, crumbly pork sausage like a coddled pig wrapped in a blanket of dreams.
