By starting with a waffle cone at Rori’s Artisanal Creamery, an ice cream concept that launched in 2012 at Santa Barbara Public Market and later expanded to Los Angeles, I was clearly missing the point. Yes, Rori Trovato’s waffle cones are just fine, but her snickerdoodle ice cream sandwiches are special enough to warrant a lengthy detour.
At Rori’s Santa Monica location, sitting on an orange stool at a tiny wood table, I laid waste to an Ice Cream Sandwich ($6.50) featuring black pepper pistachio nestled between two house-baked snickerdoodles. The ice cream was distinctly flavorful, but these snickerdoodles were epic. The cookies were not too soft, light on cinnamon, buttery, with great crumble, and stood up to the ice cream without falling apart or squeezing ice cream beyond the sandwich edges.
