I recently enjoyed my stay at Hyatt Regency Maui Resort and Spa, a family-friendly hotel on Maui‘s west coast. It was heartening to see the area recovering from the 2023 fires that ravaged nearby Lahaina. On long walks along the bike-free Ka’anapali Beach trail and jaunts in my car up and down the coast, I saw enthusiastic tourists partaking in everything from surfing to snorkeling and catamaran cruises. During my visit, I savored several meals on property, including the special “Aloha Plates and Pours” brunch at ‘Umalu. Discover my top picks for breakfast at Swan Court, lunch at ‘Umalu, and dinner at Japengo. The Hyatt Regency Maui also offers many ways to imbibe with varying degrees of alcohol and caffeine, depending on your drink preferences. I’m happy to report two notable liquid successes at Hyatt Regency Maui. Huli pau!

Swan Court Breakfast: Breakfast Udon Ramen

Many people opt for the breakfast buffet at Swan Court, but the breakfast udon “ramen” called to me from their a la carte menu. This comforting noodle soup features tare pork broth bobbing with bouncy udon noodles. Toppings consisted of lean char siu pork, baby bok choy, shiitake mushrooms, corn kernels, kamaboko (Japanese fish cake), two poached eggs, chile oil, and scallion shavings.

‘Umalu Lunch: Sesame Seared Ahi Sandwich

I returned to ‘Umalu for lunch to see what “Aloha Plates and Pours” chefs Gevin Utrillo and Ryan Ferguson usually serve. Props to the Endless Summer salad with ingredients like Kula strawberries, candied mac nuts, and mango-lilikoi vinaigrette, but their seared ahi sandwich was my favorite. Rosy, silky tuna joined crunchy slaw, tangy cucumber namasu, and wasabi aioli on a soft brioche bun.

Japengo Dinner: Moriawase Sashimi Suijin

Sunset views of the Pacific Ocean, bathed in golden light, would be reason enough to dine at the sprawling Japanese restaurant Japengo. Masamichi “Masa” Hattori also has some fun specials like share-friendly, 15-piece Moriawase Sashimi Suijin. During my meal, that meant tako (octopus), hamachi ( yellowtail), maguro (tuna), ono (wahoo), and saba (Japanese mackerel).

Coffee: Honolulu Coffee

Honolulu Coffee is a Hawaiian mainstay and the Hyatt Regency is the only place to find them on Maui. I visited the lobby daily for Kona-grown, Honolulu-roasted beans that factored into cold brew and seasonal drinks like a yuzu spritzer, which I spiked with espresso, and a local latte co-starring Hawaiian Rainbow Bees macadamia nut honey and house-made Laie Vanilla syrup.

Cocktails: Japengo Zodiac Cocktail Experience

Japengo matches cocktails with each diner’s sign for their Zodiac Cocktail Experience. I’m a Scorpio, so they made me a Mystic Scorpio, a “A deep, intense cocktail with layers of flavors, reflective of Scorpio’s passionate and mysterious nature.” My wife is a Libra, so she scored a more suitable Equinox Elixir, “a balanced, elegant cocktail that signifies Libra’s love for harmony and beauty.”
