Chefs Hanis Cavin and Sara Stroud found success with Carnitas Snack Shack. Their open-air, pig-fueled gastropub debuted in San Diego’s North Park in 2011. When the duo expanded in 2014, they turned to North County and Del Mar Highlands Town Center in Carmel Valley. The freeway friendly, fast casual outpost features a brick patio with corrugated metal railing. Their dining room touts pig murals both painted and 3D. A blackboard menu promotes some dishes unique to Del Mar.
Snackshack Pork Burger ($9) features a patty of beautifully seared pork with a spicy tinge and rosy core. Candied bacon, pungent Gorgonzola, a liberal dose of aioli and crisp lettuce help fill out the airy brioche bun. Each burger comes with corn salad. To get the full Carnitas Snack Shack effect, supplement with crispy seasoned French fries and bacon ketchup. By the end of this meal, you’re liable to let an oink or two slip from your lips.
