Carlsbad is best known for Legoland, but the coastal city in North County San Diego has a long, varied history. Spanish missionaries initially colonized the area, wresting control from the native Luiseño people. Mexico took hold from 1821-1848. People named the city Carlsbad in 1848 for a place (now part of the Czech Republic) that the Germans called Karlsbad. Apparently people saw similarities between the mineral springs in Karlsbad and Carlsbad. I’ve brought my daughters to Carlsbad/Legoland many times in recent years, staying in nearby hotels and rental properties. No surprise: I prefer in-town meals to theme park food. Carlsbad Village has the highest concentration of good restaurants, breweries, and coffee bars, but Carlsbad has other flavorful pockets. Find my favorite Carlsbad food and drinks since 2024.

“Don’t exist, live” at the first Carlsbad restaurant from John Resnick, now a four-part partnership with chef Eric Bost on State Street. Fine casual Jeune et Jolie, all-day Wildland and Michelin-starred tasting menu counter Lilo are their other must-try restaurants. Wood-fired, seasonal cooking stars at Campfire, where menu headings are Trailhead, Kindling and The Fire. Yes, they serve s’mores.

Must Order Dishes: Caesar Salad of Sorts, Shrimp Cocktail, Boneless Ribeye, Garlic Croissant

This steakhouse from San Diego based culinary star Richard Blais and Executive Chef Jonathan Bautista overlooks the Arnold Palmer designed Aviara Golf Club and Batiquitos Lagoon. Big-name steaks arrive “from the embers” and are available with supercharged sides. Knives, presented tableside, run the spectrum from sword to saw. Garlic croissants are nearly worth the trip on their own.

Must Order Dishes: Aguachile, Caesar Salad, Roasted Chilean Seabass

Linda DiNitto built on her Carlsbad Village success with Italian restaurant 264 Fresco by opening Fresco Cocina down the street. Fresco’s menu may have been pan-Latin to start in 2022, but now focuses on Mexico. Based on my experience, seafood is the play.

Jacquie Barille and husband Joe, who also run Café Topes downtown, serve some of San Diego County’s best cake and yeast-raised donuts at The Goods. Mainstays like Vermont maple and apple fritters are great. Monthly specials are also worth seeking.

Veteran roaster John Herrmann and fellow coffee pro Ray Orate run this homey coffee bar behind a massage parlor in Carlsbad Village. The duo makes syrups in-house and serves drinks in distinctive ceramic mugs to enjoy on a succulent lined patio.

Must Order Dishes: Four Courses, Plateau de Fruits de Mer

Jeune Et Jolie is no longer the pinnacle for seasonal culinary innovation in Carlsbad now that sister restaurant Lilo debuted down State Street. However, their four-course prix fixe menu is still worth a detour. Supplementing with fruits de mer is de rigueur.

Must Order Dishes + Drinks: Crudo, Local Catch, Basque Cheesecake, Recommended Wine Pairings

Jeremy Simpson and wife Kirsten Potenza created a family-friendly, indoor-outdoor gathering place for locals. You can trust whatever Simpson and his team pour and chefs Kelly & Elliott Townsend plate at Little Victory, a “neo bistro natural wine thing.”

The Lullabar is a multifaceted concept from Stephanie Issa, Christine Ong Forsythe, and Christine Dawood in The Beacon La Costa. The partners pair a nail salon and coffee/matcha bar with childcare, an ideal package for busy parents. Luxuriate and caffeinate.

Must Order Drinks: Beer Flight, Kernza Lager, Lief, Neon Bloom, Peach Blossom Pie

Friends Jesse Pine and Mat Robar now have five Pure Project locations in San Diego. Their umbrella-shaded patio in Carlsbad Village has overlooked the train station since 2020. Their convincing 5-beer flight is a fantastic way to start. Choose from 23 beers on tap.

Must Order Drinks: Cold Brew on Nitro, Salted Rosemary Cold Foam Cold Brew (Seasonal)

Revolution Roasters founder Miriah Leclerc expanded from Oceanside to Carlsbad Village in 2023. A biplane “flies” above the sleek coffee bar and bakery, which features PVC pipe racing stripes, a three-group Slayer espresso machine, and Poursteady brew bar.

Must Order Dishes + Drinks: Cascara Sparkling Tea, Cold Fashioned, PSL, Far Out Bowl

Steady State Roasting is one of the best places to drink coffee in Carlsbad. No doubt. Elliot Reinecke’s team also serves breakfast sandwiches on Prager Brothers bread and eye-popping grain bowls. Lines can snake out the door, but they have a system.

Wildland has become a regular stop for breakfast, lunch, and dinner for my family. They have a fantastic baking program, make pasta in-house, and showcase seasonal comfort food in delightful ways all day. The group runs high-end restaurant Lilo in back.

Must Order Dishes: Smoked Bologna Sandwich, Beef Fat French Fries

Brad Wise and Trust Restaurant Group run this casual butcher shop, market and deli in The Beacon La Costa strip mall. They have beautiful looking steaks and sausages and sell stellar sandwiches (especially smoked bologna) and indulgent beef fat fries.

Agua Hedionda Lagoon Foundation Discovery Center ↓

Visiting this charming nature education center and making suggested donations helps care for animals and the adjacent habitats. I met local celebrities like Stripe the blind red-tailed hawk, Sally the salmon boa constrictor, and Tammy and Leo the sulcata tortoises. My daughter and I also enjoyed playing the Bimini ring game, which Ernest Hemingway invented on a fishing trip to Bimini Island.

Legoland California is a more casual Disneyland alternative that debuted in 1999. Feats of Lego brick fancy pervade the park, including a cruise with sights like Mount Rushmore and the Taj Mahal. They have roller coasters, flight simulators, and a submarine. SEA LIFE Aquarium staffers nurse ocean creatures like leopard sharks and stingrays to health before releasing them into the wild. Dino Valley is the latest area to launch at Legoland, which includes Coastersaurus and Explorer River Quest.

Cassara is walking distance to Legoland and the Carlsbad Premium Outlets and overlooks The Flower Fields (when they’re in bloom). Fun options on property include a family pool with a splash pad and activity center with crafts and ice cream socials.
