At Terrine in Mid-City Los Angeles, chef Kris Morningstar is best known for his charcuterie and meat preparations. He recently launched lunch with business partners Stephane Bombet and Francois Renaud, and Terrine’s lunch menu is loaded with bold dishes, including foie gras terrine, French onion soup, and a burger with truffled butter, but the dish that made the biggest impression was a salad. Morningstar’s Broccoli & Chicory Salad ($14) is great.

Seared broccoli joins chicory, crunchy endive and bitter radicchio is a savory bath of lemon anchovy vinaigrette. Sunflower seeds, cubes of sharp Pecorino cheese, and nutty farro complete the plate, which is great to split before diving into something like a French dip.
