My last experience with Columbia Square, the longtime CBS home for TV and radio, was in 2008. Artist Thierry Guetta, aka Mr. Brainwash, had turned the gutted building into his canvas, which doubled as a backdrop for the documentary, Exit Through the Gift Shop. The building took years to revamp, and now contains interesting tenants like NeueHouse Hollywood, Sugarfish, Paley (a nod to CBS founder William Paley) and Rubies + Diamonds, a progressive coffee and bar from LAMILL co-founder Jean Shim.

Decor includes colorful, art-lined walls (none from Mr. Brainwash), a pair of elaborate chandeliers, cushioned banquettes, a white L-shaped counter, and BKON vacuum processed RAIN technology to brew coffee and tea. Still, their nitro drinks interested me most.

Order the Nitro Flight ($8) to experience a variety of cascading beverages. The line-up includes tangy Nitro Cold Brew (or decaf); gritty Nitro Creamy Matcha Tea containing almond milk and simple syrup; sweet carbonated Nitro Ginger Ale Green Tea with a touch of citrus; and antioxidant rich Nitro Turmeric Tea accented with rosemary and yuzu. Aaron Rodriguez works on drink development. He was behind the bar and handed me his card, which reveals he is “not afraid to mix shit up,” an attribute that seems to be serving Rubies + Diamonds well.
