There were a couple weeks where we didn’t encounter prized pig in 2012, but that definitely wasn’t going to happen in Charleston, where pork is such an integral part of the Southern palate. Where the two boroughs of Cannonborough and Elliotborough converge, Chef Josh Keeler, wife Heather and their dog Walter preside over Two Boroughs Larder, where they rely on local farmers and kitchen ingenuity to deliver contemporary Southern dishes like Porchetta di Testa ($11). They produce silky slices of head cheese and serve them on a wood plank with crushed pistachios, julienne Arkansas black apples, chives and sweet onions.
