Elizabeth Harris, who’s found success with her Elizabethan Desserts, now shares an Encinitas compound with Sunshine Gardens Nursery. Betty’s Pie Whole Saloon has a cowgirl feel, complete with Wagon wheels, wooden dining room with horseshoe chairs, cowgirl placards and Hank Williams on the stereo. The space also includes red and yellow tiles and a blackboard menu listing over 20 different Savory and Sweet pies.
I enjoyed the sour cherry and summer peach pies with lattice tops quite a bit, but the blue ribbon goes to Grandma Lucy’s Chicken Pie ($7.95). The pie features a buttery Parmesan rosemary crust, which cradled juicy free-range chicken breast, carrots, peas, zucchini, and light garlic-kissed gravy. My first flaky forkful of pie was nearly good enough to make a cowboy cry.
